{"id":12,"date":"2021-10-19T11:34:59","date_gmt":"2021-10-19T10:34:59","guid":{"rendered":"https:\/\/blogs.ncl.ac.uk\/newcastle-university-catering\/?p=12"},"modified":"2021-10-19T12:02:47","modified_gmt":"2021-10-19T11:02:47","slug":"black-history-month-recipe-trinidadian-beef-vegetable-stew-with-dumplings","status":"publish","type":"post","link":"https:\/\/blogs.ncl.ac.uk\/newcastle-university-catering\/black-history-month-recipe-trinidadian-beef-vegetable-stew-with-dumplings\/","title":{"rendered":"Black History Month Recipe: Trinidadian Beef &amp; Vegetable Stew with Dumplings"},"content":{"rendered":"\n<h4 class=\"has-text-align-center wp-block-heading\">To celebrate Black History Month, we&#8217;re sharing some of the recipes available from our African and Caribbean inspired menu available at the Street Kitchen.<\/h4>\n\n\n\n<p>To find out more about what we&#8217;re doing to celebrate Black History Month through food this year, you can <a rel=\"noreferrer noopener\" href=\"https:\/\/experience.ncl.ac.uk\/black-history-month-recipes\" target=\"_blank\">read our blog post<\/a> and join us at our Street Kitchen in the forum from the 25th to the 29th of October.<\/p>\n\n\n\n<h5 class=\"wp-block-heading\">Ingredients<\/h5>\n\n\n\n<p><strong>Green seasoning<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>1 cup fresh cilantro (leaves and stems)<\/li><li>4 cloves garlic<\/li><li>1 large yellow onion<\/li><li>1\/4 cup chives, chopped<\/li><li>2 TBSP fresh thyme<\/li><li>2 TBSP fresh lime juice<\/li><li>1\/4 cup water<\/li><\/ul>\n\n\n\n<p><strong>Beef<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>3\/4 cup green seasoning<\/li><li>1 lb stewing beef<\/li><li>2 TBSP coconut oil<\/li><li>2 TBSP coconut sugar<\/li><li>2 cups carrots cut into 1\/2 inch long pieces<\/li><li>3\/4 cup full fat coconut milk<\/li><li>1\/2 cup water<\/li><li>3\/4 tsp sea salt (plus more for seasoning)<\/li><\/ul>\n\n\n\n<p><strong>Dumplings (optional)<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>100g plain flour<\/li><li>100g butter<\/li><li>1\/2 tsp salt<\/li><li>1\/2 cup water<\/li><\/ul>\n\n\n\n<h5 class=\"wp-block-heading\">Method<\/h5>\n\n\n\n<ol class=\"wp-block-list\"><li>Add cilantro, garlic, onion, chives, thyme, lime juice and water to a food processor and pulse until combined into a relatively smooth paste.<\/li><li>Place beef in a large glass bowl and sprinkle generously with salt. Add 3\/4 cup green seasoning to bowl and combine with meat. Allow to marinade overnight or for at least 45 minutes.<\/li><li>Once meat is ready, heat a large cast iron or stock pot with coconut oil on medium-high heat.<\/li><li>Add coconut sugar and use a spoon with a long handle to stir and incorporate with coconut oil. Allow sugar to heat until it begins to melt, bubble and brown. It\u2019s a good idea to keep your stove fan on because things will get smoky. Keep your seasoned meat handy.<\/li><li>Once the sugar has turned medium-dark brown, it\u2019s time to add in your seasoned beef. Add the beef, reserving most of the juices\/seasoning in the bowl to add to the dish later on. Stir beef continuously into the caramelised sugar so that it\u2019s fully coated (for about 1 minute).<\/li><li>Reduce heat to medium and cover pot to allow meat to release water (3-5 minutes).<\/li><li>Add chopped carrots, remaining reserved seasoning from meat, salt, coconut milk and water to pot. Bring to a low boil, reduce heat to low and cover pot. Allow to cook 40 minutes until beef is tender.<\/li><li>Meanwhile, make dumplings by combining flour, butter and salt and mix until combined and then add the water. Roll into small balls.<\/li><li>After 35-40 minutes, add dumplings to pot and gently stir to submerge in liquid. Cook 5-10 minutes more or until beef is sufficiently tender.<\/li><li>Taste for salt and adjust as necessary.
