Fancy making ‘Snow Cream’ the 17th Century way. Well, here’s how;<\/p>\n

Take\u00a0thick<\/span><\/span>\u00a0cream<\/span><\/span>\u00a0of the\u00a0evening<\/span><\/span>\u00a0milk<\/span><\/span>\u00a0put<\/span><\/span>\u00a0to it a little sugar and some\u00a0rose<\/span><\/span>\u00a0water,\u00a0the<\/span>n<\/span>\u00a0put<\/span><\/span>\u00a0it into\u00a0silver\u00a0<\/span><\/span>basin<\/span><\/span>\u00a0or a wooden\u00a0bowl<\/span><\/span>\u00a0and with a little\u00a0rod<\/span><\/span>\u00a0make a little\u00a0brush<\/span><\/span>\u00a0and\u00a0beat<\/span><\/span>\u00a0it with good strength and as\u00a0you<\/span><\/span>\u00a0see it\u00a0rising<\/span><\/span>\u00a0to froth\u00a0put<\/span><\/span>\u00a0it with the\u00a0rod<\/span><\/span>\u00a0into the other\u00a0side\u00a0<\/span>of the\u00a0bowl<\/span><\/span>\u00a0from\u00a0th<\/span>e<\/span>\u00a0plate where\u00a0you<\/span><\/span>\u00a0beat<\/span><\/span>\u00a0it and when\u00a0you<\/span><\/span>\u00a0have<\/span><\/span>\u00a0a good\u00a0deal<\/span><\/span>\u00a0made into froth take it up with\u00a0a skimmer\u00a0<\/span><\/span>and as fast as\u00a0you<\/span><\/span>\u00a0lay it into\u00a0you<\/span>r<\/span>\u00a0cream\u00a0bowls<\/span><\/span>\u00a0throw\u00a0searced<\/span><\/span>\u00a0double refined sugar\u00a0upon it, and when\u00a0you<\/span><\/span>\u00a0have<\/span><\/span>\u00a0taken\u00a0up<\/span><\/span>\u00a0as much\u00a0froth<\/span><\/span>\u00a0as\u00a0you\u00a0<\/span><\/span>have<\/span><\/span>\u00a0that made,\u00a0tha<\/span>t<\/span>\u00a0fall to beats in\u00a0you<\/span>r<\/span>\u00a0cream<\/span><\/span>\u00a0again so\u00a0do<\/span><\/span>\u00a0till\u00a0you\u00a0<\/span><\/span>have<\/span><\/span>\u00a0made\u00a0you<\/span>r<\/span>\u00a0dish of\u00a0cream<\/span><\/span>\u00a0as big as\u00a0you<\/span><\/span>\u00a0will\u00a0have<\/span><\/span>\u00a0it that is\u00a0done<\/span><\/span><\/em><\/p>\n

This recipe is part of a larger recipe book that was created by a number of people including the manuscript’s owner, Jane Loraine. The recipes are culinary, medicinal and cosmetic. The manuscript is an excellent example of the kinds of knowledge and expertise that women in an early modern household needed during the 17th Century.<\/p>\n
